Prior Consultation

Confer with the officer responsible for food hygiene at the public health center that has jurisdiction over your restaurant.

◇ Prepare the restaurant floor plan.
◇ Delegate a food hygiene manager.
◇ Find out whether or not you need to do a water quality analysis.
Presentation of Documents

Present the following documents 10 days before the restaurant is scheduled for completion.
You also need to arrange for an inspection.
◇ Business permit application.
◇ Summary of equipment, fittings and furniture, and placement map for equipment and furniture.
◇ A copy of the company register (only for corporations).
◇ Certificate of water quality (if you plan to use a water tank or water well).
◇ Proof of food hygiene manager's qualification (e.g., certificate).
Pay the registration fee (in Tokyo, 18,300 yen as of April 1, 2007).
Facility Inspection

Undergo inspection.
If there are any problems, make the necessary improvements and arrange for reinspection.
Issue of Business Permit

If you meet the required standards, you will be issued a business permit in one week.
Start Your Restaurant
Post the nameplate of the food hygiene manager in an easy-to-see location.
